Can my gas fire still leak carbon monoxide when not in use?

Guessing you mean gas stove or fireplace. If there is a pilot light, then yes CO can form. If the appliance has no pilot light and is not in use, no CO can be produced. Building codes usually require gas appliances with pilot lights to be vented in some fashion to the outside.
